Strawberry Topping

The past few years I have helped in the cafeteria at my daughter's school and have been blessed to meet many talented people. One of those people is Mrs. Margaret. Once a month she arrives in the kitchen with a cart abundantly filled with delicious food to serve at the church's "Joyful Servant's Lunch". My day always gets brighter seeing her smiling face come around the corner knowing she is going to make the kitchen smell extra wonderful that day all the while crossing my fingers there will be a few leftovers to indulge in. She has always been kind enough to share recipes whenever I ask and now I am excited to share this delicious recipe with you, tea friends! 

Pictured above are the strawberry cupcakes I made for the school bake sale each topped with Mrs. Margaret's signature topping. My daughter said it was one of the first items to sell out! I've also made a batch and served in single serve cups along with fresh fruit for my daughter's birthday at school and it has been requested by her friends repeatedly. 

I've found it to be the perfect go-to dessert for any event including tea parties, birthday celebrations, wedding or bridal showers and holiday events which always gets rave reviews from party-goers.

Mrs. Margaret's Marvelous Strawberry Topping and Fruit Dip

Ingredients

2 - cream cheese 8 oz blocks

1 - stick of butter

1 lb powdered sugar

1 - whipped topping 16 oz

2 cups freshly chopped strawberries sprinkled with sugar

half strawberries for garnish

Directions

Step 1: Blend cream cheese and butter

Step 2: Slowly blend in powdered sugar in small batches. Once blended, set aside.

Step 3: In a separate bowl, gently fold strawberries into whipped topping with a spoon.

Step 4: Add strawberry mixture to powdered sugar mixture by gently folding in with a spoon.

Step 5: Spread over cooled strawberry cake or cupcakes or serve as a dip with fresh fruit, add half strawberries for garnish
