Dream Cookies: A Simple Little Treat Bursting with Flavor and Perfect with Tea

There are some recipes that arrive in our lives quietly, passed from one friend to another, written on a small card or scribbled on the corner of a notebook. These recipes often become the ones we treasure most — not because they are complicated, but because they carry memories, warmth, and the sweetness of friendship.

Today I’m delighted to share a recipe for Dream Cookies, lovingly made by my friend Bobbie. These cookies are exactly what their name promises — light, simple little bites that are absolutely bursting with flavor. The kind of cookie you reach for again and again without even realizing it.

They are wonderfully uncomplicated to make, yet somehow they taste like something truly special.

A Funny Story Behind The Cookie

Bobbie first shared these cookies a few years ago with our small group at church. She had worked diligently to make them for our group of men and women meeting that evening, but on they way to church, the baker's worst nightmare occurred. The dish containing the cookies had been jostled in route and when she arrived, the cookies were scattered all over the floor of the vehicle. She gathered them up and was going to throw them away, but once she explained what happened, the men didn't care and ate them anyway! It was that night that they became known in our little group as "Truck Floor Cookies" and we have enjoyed them many times since! 

I didn't try one until a few weeks ago when our group hosted a baby shower. You see, I try to eat gluten free but upon a weak moment (you know how it is), decided to finally sample this cookie that our group has raved about.... and friends, I couldn't BELIEVE how divine this simple, unassuming cookie was.  I had to share this recipe with you, tea friends, because these cookies would be wonderful for tea parties and very easy to make. The flavor pairs deliciously with hot tea!

 Dream Cookies

Ingredients:

1 cup Softened Butter

1 cup Sugar

1 tsp Flavoring almond extract (Bobbie uses almond but said you can also use vanilla, if you prefer)

2 cups sifted Plain flour

1 pinch of Salt

1 tsp Baking powder

optional: 1/2 c chopped nuts

For the Glaze

Ingredients:

1 3/4 cups powdered sugar

3 tbsp milk

1 tsp vanilla extract

1/2 tsp almond extract

1/4 tsp salt

optional: food coloring and toothpick

Directions

Preheat oven to 300 degrees. Cream butter, add sugar and beat until fluffy. Add flavoring and stir. Stir in flour, baking powder, salt, (& nuts if you want), until smooth. Form into small ball’s, place on an ungreased cookie sheet. Press down lightly with fingers or the bottom of a glass and bake at 300 degrees for 20 minutes or until lightly brown. If you want them to have a wedding cookie look, bake for a few minutes less before turning brown (we know our ovens). Also, when pressing them down on a cookie sheet, dip the bottom of the glass in powdered sugar for a little sprinkle to make them "extra dreamy", if you wish.

Glaze:

Mix all ingredients in a large mixing bowl with a spoon or rubber spatula until it is well blended and able to "drizzle" easily. If it's too runny then add a small bit of powdered sugar, if it's too thick then add a small bit of milk. Once you are happy with it's consistency, add a tiny bit of food coloring on the end of a toothpick (optional) and stir the coloring in until it is mixed well. If it's too light, add a bit more coloring and repeat the process until you reach the desired results. Take a small spoon, Bobbie said a demitasse spoon works well, and use it to drizzle a small amount and spread onto each cookie. Let sit until the icing dries. Enjoy!
